Product page first, then collections and home. Designed against your real photography rather than placeholders, because e-commerce design lives or dies on the imagery.

The honest part
When 14 days is the wrong answer.
A fixed deadline only works when the scope genuinely fits inside it. These are the cases where I will tell you so rather than take the booking.
Shopify Plus-only functionality — checkout extensibility, scripts, B2B — unless you are on Plus, in which case say so and it is in scope.
Building a custom Shopify app. That is its own sprint and its own skill set.
Replatforming from another system with tens of thousands of SKUs and years of order history, which is a migration project rather than a design one.

Before you book
Whichever serves the store. A well-chosen theme customised properly is faster and cheaper and is right for most merchants; a custom theme makes sense when your product needs a layout no theme expresses. I will recommend one rather than default to the more expensive answer.
